On February 28, we celebrated
Niko's 5th Gotcha Day.
He loves chicken.
And he loves coconut oil.
So on his special day, I made a dish
combining those two.
As usual, Goro helped me cook :-)
After 20 minutes in the oven,
baked coconut chicken is ready!
Glad both Goro & Niko (especially Niko)
loved it :-)

ReplyDeleteOh my, I'm running late for Niko's Birthday party but I sure did LOVE these photos. Their faces and how they really love the chicken with coconut oil! Wow, what a great idea and very healthy. On Thursday I did bake Cod fillets for us and oh my, do they love that too! It makes their human parents happy to see our furbabies happy and we love to share.
Sending you hugs for a great week; hope soon it will FINALLY warm up... Our Japanese Magnolias never have been this late.
